I often will have a customer midway through an order ask what they had last time. This is fine if the customer is asking on a delivery order but I am not able to see the information on a take out. In order to go to the previous order I must change the service type to delivery. This creates issues if one does not remember to change the service type back to takeout.
If you are in the main order screen and you click on the customer information with a delivery service type it takes you the the customer entry screen. In all versions from 2.0 until version 3.0 this was able to be done in all service types.

Navigate to Office Manager>Service Types. Uncheck CUSTOMER NAME ONLY from all service types.
Then when you click on the name field for any service type, the customer entry window will open and you can view the last order.
I just verified this behavior has not changed. Using version 3.02.
I have been having this exact same issue of not able to see the previous order mid through with a take out order...glad I saw this post
Only issue I have is that when I have someone come in for a pick up but their address is listed b/c they have had a delivery before....how do I take the address off? For us by having the address shown on the receipt it confuses the drivers and they sometimes take the pizza for a delivery when it's a pick up.
Before, we would click the name and the address will go away (along with the phone number) However; I can't do that now if I follow the instructions above...meaning if I want to look at a prior order mid way; it now takes away my ability to take an address off for a pick up when I click on the name field...I would like to be able to do both actions
